Hannibal never realizes Freddie is alive, but Will, not being able to choose sides, still comes too late for Alana and Jack. After having discovered that Abigail lives, he finds himself a part of Hannibal's escape and follows along because he wants to save her. They make their way through France to a cabin in southern Germany that Hannibal owns to spend a summer there, laying low. It's a time and place much happier than Will hoped, bringing closeness to a family that is splitting at the seams.

Summary
Will doesn't leave Hannibal's dinner party for his date with the Chesapeake Ripper. As a result, Hannibal alerts Will of his encephalitis that night and uses Will's recovery to explore his curiosity about friendship-- and what makes Will Graham fascinating. Hannibal's growing affinity for Will compels him to use a somewhat softer approach to influencing the man than he had originally planned, and Will isn't impervious to becoming the object of someone's affection after a lifetime of self-imposed social isolation.
TL;DR: S1 goes in a much fluffier direction as of "Sorbet." Will is Will. Hannibal is Hannibal, just a smidge closer to the man we know and love by the end of S3.

Summary
Will Graham is a producer on a Bachelor knock off reality TV show. Against his protests and better judgement, Dr. Hannibal Lecter is cast as the primary love interest on the show. Despite his many initial misgivings, Hannibal is a hit, and Will finds himself as drawn into the story Hannibal is creating as everyone watching at home. Everything is going well until Will becomes suspicious that he is the real object of Hannibal's affections, and all of a sudden contestants start to turn up murdered.
"Vena Amoris" is the (Mythical!) vein that runs from the ring finger to the heart; supposedly that is why we wear wedding rings on that finger.

Summary
Will kisses Alana Bloom then runs straight to Hannibal Lecter's house in a blizzard when he crashes and burns. A direct continuation of the scene in Fromage where Will tells Hannibal about the kiss. Will realizes quickly, while they share a bottle of wine over that delicious looking dessert, that the good Doctor is clearly attracted to him. The snow is getting worse when Will starts to hear the phantom whimpering again and he falls on the same tactics of avoidance he'd used earlier unsuccessfully on Alana to change the subject with Hannibal. Things go much better this time around, to the surprise of everyone involved.
["There may come a time Will, when you realize Alana was right to turn you down. There may even come a time when you resent that I failed to do the same but I want you to remember," Hannibal snarled, forcing Will to stumble backward as he stalked them across the room and into his desk. "I want you to remember just how hard I tried to say no to you."]

"It was here brushing Hannibal’s hair back, combing it back into place with his fingers, that Will realized this had gone way beyond simple medical treatment. To be perfectly honest, there was no call for him to do any of this; he easily had the authority to have ordered someone else to do it. And yet, he had chosen to patiently sit here and take care of Hannibal."
After seeing Hannibal injured, but alive at the end of Fromage, Will is compelled to stay and take care of him. Hannibal can't resist the offer and, as it turns out, neither can Will.

After Tobias attacked Hannibal, Will's nightmares grow worse. At night he would jolt awake with the image of a dying Hannibal before his eyes and after a few unsuccessful attempts to fall asleep again, he’d wander around the house, telephone in his hand and trying to come up with an excuse so he could call Hannibal. So he could hear his voice, hear that he was still breathing and alive.
