When life gives Mallow lemons, she doesn't just make lemonade; she comes up with a new recipe that utilizes a Pokémon move to bring out the lemon flavor, and she shares it with the entire island.
When life gives Mallow feelings, she blends them into a dish and hopes nobody notices.
She did not expect the dish itself to go unnoticed altogether because a certain someone woke up that morning and had the same idea, and Mallow realizes that maybe she did want her feelings to be noticed.

Summary
They really are good at everything they disguise themselves as. Really, Ash thinks, Team Rocket would be able to make a nice living if they just tried their hand - for real - at any of the things they pretended to be. They do it here, it seems, with the malasadas. Ash hadn’t recognized them at first but then Pikachu did; it’s not like they were doing anything bad, anyway, and Ash likes to encourage them when they engage in non-criminal behavior.
Anyway. So Ash thinks that Team Rocket will probably know what to do.
